Do you know why marshmallows blow up when it is heated? Marshmallows consist sugar syrup and gelatin. These ingredients help to increase the volume of air in the mixture. Also, gelatin allows for the marshmallows to increase in size, as it is elastic in nature. This elasticity of gelatin helps to release small air bubbles to the mixture in the process of making marshmallows. So, when we heat up the marshmallow the air in it expands and finally it gets blown up.
